Caramel Bits Rice Crispy Treats


This my friends was supposed to be a beautiful pink rice crispy treat. I added the pink food color gel to the melted marshmallows and it looked a beautiful bright pink but as you see above mixed with the brown rice crispies the pink did not translate well but Hey.. it still tastes great and I love the addition of the caramel bits so I call it mostly successful. Here is what I did...
Caramel Bits Rice Crispy treats
7 C rice crispy cereal
1 Cube of butter
1 10oz bag of mini marshmallows
1 Cup of Caramel bits
food color 

Spray your 9x13 pan. Measure the cereal into a mixing bowl. Melt the butter and marshmallows over medium low heat. Add food coloring to desired color in the marshmallow mixture. Mix into the cereal until completely combine. Then add the bits and mix until incorporated. (be sure to add them last so they don't just melt into the mix. Press into your prepared pan. I like to butter the back of a spoon for the quickest and easiest way to press with not mess or fuss. Allow to cool before serving.

Salty Sweet Gooey Corn Puff O' Wonder


This is one yummy recipe!! It is the perfect combo of salty and sweet and gooey and we love it around here! 

SALTY SWEET GOOEY CORN PUFF O'WONDER
12 C Corn Puffs or pops (you can always use microwave buttered popcorn too. If you chose to do this do your best to sift out the un popped kernels)
1 stick of butter
1 C packed brown sugar

Lay some parchment paper out either on your table or on a jelly roll pan or cookie sheet. Measure out your puffs into a large mixing bowl. In a large sauce pan, melt the butter.. Add the brown sugar and stir until combine with the butter. Add the marshmallows to the butter mix and stir until melted. Pour into the puffs and mix until all the puffs are covered. Dump and spread out onto the surface you have prepared. 




(NOTE: if you did not use parchment paper be sure to lightly spray with a non stick pan spray to prevent the puffs from sticking) Allow to cool (if you can) and enjoy!!

The BEST Mint Brownie Recipe!! (uses a cake mix!!)


I love this recipe! I have taken some of this recipe and that recipe and developed this delightful Mint Brownie recipe that is exactly what our family loves! Its has just the right enough mint to make it the perfect chocolate mint mix AND a wonderful fudgy frosting that is so good its bad!! The browning isn't too fudgy or too cake like. Perfect I tell ya!! (atleast for what we are looking for :)) You are going to love this one my peeps!!

Mint Brownies
1 Devil’s Food Cake Mix 
 6 TBS butter (cooled to room temp)
3 eggs

Pre heat your oven to 350 and lightly spray a 9x13 cake pan.Mix cake mix, butter and eggs together. Spread the batter into the bottom of your prepared pan. Bake at 350 degrees for 20-25 minutes Be careful and keep an eye on these. You don't want them to be over done. Let cookies cool completely.

Peppermint Frosting:

1/2 c. butter, softened
2 Tablespoons milk
2 c. powdered sugar
1 1/2 tsp. peppermint extract
6-8 drops of Green food coloring 
Mix together all the ingredients (add more or less powdered sugar until you get the consistency you like). Spread on top of the cooled brownie

Chocolate Frosting:
2 C. Milk chocolate chips
1/2 C +2 TBS butter

Melt chocolate chips and butter together in a double boiler OR slow and low over the stove Spread melted chocolate on the green frosting.

Salted Marshmallow Fudge cookies-An easy semi-homemade idea!!

Looking for a quick easy party food? Need something fast to take to a friend in need? Bridal or baby shower coming up? Bake sale? Why not Salted Marshmallow Fudge Cookies? 

 This is a super quick way to fancify your fudge marshmallow cookies and it super duper easy!!  You will need a package of the marshmallow fudge cookies (ya know....like the ones that rhyme with twinwheels?? OR Great Value makes a great (haha get it?? GREAT) version too and they are less than half the price and neither is free from the cracks on the surface of the fudge so go for the cheap I say) You will also need a torch and a sprinkle of kosher salt
BTW this little torch was found at Harbor Freight for $9 full of fuel AND he is refillable.
 Pretty great deal!! (if you are in the market for a torch) :) 
All you do is wave the torch over the top of the cookie until the chocolate gets shiny and sprinkle a little bit of kosher salt over it. Let it set (re-harden) and serve. YUMMY!!
 NOTE-keep in mind that the end of the torch stays hot for a while after the flame is off so be careful with it until you know it is cool.
