Pinterest Buster: Lemon Zucchini Bread

We have an over abundance right now of zucchini in our garden. It is getting bad! We have logs of zucchini. Like thick tree trunks. I am going to start freezing it but until then I am searching for zucchini recipes. Have you seen the recipe for lemon zucchini bread that is circulating Facebook and pinterest? It looked awesome and I love lemon so I gave it a shot!

And here's mine. Wah-wah! It did not turn out as well. My loaves were no where near as pretty! The texture was off too- it was sort of gummy. Or rubbery or something. I think there were a couple of factors. I am planning on doing some testing to get it just right because the taste was divine!


I was out of powdered sugar so I had to improvise my glaze. Really it ended up being more like frosting. But man oh man was it yummy!


Sad little slices. Have no fear they will be better soon enough! I am planning on testing and testing to figure out where I went wrong. 

Oh and just for funsies! Here is my glaze recipe:

Cream cheese and Lemon Glaze

3/4 of a can of cream cheese frosting
Zest from half a lemon
Juice from a whole lemon
2 tablespoons milk

Whisk all ingredients until smooth. And voila!

Pinterest Buster Recipe


Pinterest Buster! HEYO! I am testing out some recipes to use for December. I want to freeze a bunch of meals because I will be working 6 days a week. I have a feeling I will need some relief. And I think I found one to freeze! These Lasagna Rolls are awesome! Not too mention they are pretty healthy.


That picture at the top is mine. The one just up above is from Skinny Taste where the recipe comes from. Which is a really great website for healthy delicious recipes. The only thing that I changed is that I added spinach because I love spinach. It was great. The whole family loved them. Which is a true test of a recipe for me. Make it tonight!

Do you have any great recipes that freeze well? I am pretty pumped about getting some frozen.

Pinterest Buster Recipe!

 I love these pinterest busting posts! I am actually using my pins. What?! That is the point of it right? I love trying out new recipes. We need new fun recipes in our rotation. Luckily three out of four of us are pretty easy going and willing to try new things. Lola is in that picky stage of hating everything. I can't wait for this stage to end! It bums me out. Any suggestions? My guess is that it is a wait it out type of thing.

Here is mine. Whomp! HA! It doesn't look appetizing but man oh man it is delicious. I loved it! Plus one out of two kids liked it. And quite frankly that is a huge success around here. The only changes I made to the recipe is that I used chicken breasts, brown rice and more chicken broth instead of white wine. The brown rice for sure changes the cooking time. It was worth it to me because I love brown rice. The nutty flavor is worth it. It adds a half hour to the cooking time. One major thing I love about this recipe is that it is a one pot meal. Less dishes= a happy mom!

Pinterest Buster Recipe


This photo is the original pin that I repinned. Isn't it pretty? If you are looking for really nice food pictures head over to Very Culinary. That is where this pin originated from. The photos over there are foodtastic! So pretty. They show my need to practice my food photography skills. And maybe not use my iphone even though it is so convenient. Which it totally is. The recipe can be found right here.



It is a basic delicious pasta recipe! The only things I changed are using a full bag of frozen peas and I omitted the pepper flakes. I knew if the kids saw red pepper flakes in it they would have declared it too spicy and refused to even try it. I can imagine that it is even better with them though.


MMM boy! I would declare this a pinterest win. One out of two kids agree that it is delicious. At this point I call that a major victory. Plus Nick and I both loved it. Have you tried any pinterest recipes recently? Were they a hit or a bust?

Swimsuit Cover Up-Victoria's shhhh....A knock off tutorial

We do a lot a swimming in the summer.  Enough to necessitate a cover up for sure.  Did you know that Vicky's secret charges 50 bucks for one like this??  It cost me less than $10 and I didn't even need a sewing machine?! 
Here's the easy tutorial:
You will need:
enough knit fabric to go around your body 1.5 times
a needle and thread to match your fabric
scissors
something to make the round of the arm pits 
(I used a dessert plate)
elastic 
(we used hair elastics) 

What to do:
open the fabric and then fold it into quarters
Cut 3 strips off the end that will be braided together for the straps.




 Using the elastics to secure the strips of fabric braid the piece into a nice long braid.
 See,,,just like this...
 Fold the fabric in half (pin together if you need to) and then cut both thicknesses to provide an  armpit hole for each side (the top corners)
Open up a hole in your braid and pull a little bit of the corner of your knit piece into the braid. 



Fold the little pulled through corner over the strands of the braid and stitch down with your needle and matching tread. Cut off excess after it is stitched down securely.

 Measure the length of the braid over the shoulder for size, cut and secure with a knot or the elastic so the braid doesn't come undone and then sew and repeat the steps above on the back side as well. Now repeat for the other side. 
To wear, wrap around the back and slide the "arm holes" across to opposite shoulders.

PSS... We cut about 4 inches off the bottom of the cover up after the pictures were taken.

! tried a recipe...twinkie cupcakes......Did it work???? PINTEREST BUSTER!!

This is the version from pinterest...

This is how mine turned out....
It tasted so good! Just like a Twinkie...I think the only two changes I would make is to fill the cake leaving the filling as the recipe called and then adding more powdered sugar to the remaining filling to make the frosting on top more firm and easier to pipe. (as you can see it isn't firm enough to put the cute spiral of frosting on the top of the cake if you stick to the recipe.) It would even be cute just to fill them and leave the frosting off causing it to look like the bottom of a twinkie too.
