Peanut blossoms-A Valentines Twist! Quick Easy and Semi-home made!

This is a quick, easy, Semi-homemade Valentines version of the good 'ol peanut butter blossom cookie recipe! 
I love it and since it is the month O' Hearts here we go!!!
You will need a peanut butter cookie mix (See I told you it was semi homemade) 
and the items you need to make said mix like eggs and oil etc Or of course you could make up your favorite peanut butter cookie dough 
AND
Some heart shaped chocolate candies.
AND
 some white sugar used to roll the dough in this is optional.... 
We are using Reese Peanut Butter hearts and a Betty Crocker Peanut Butter Cookie Mix.
Make up the dough exactly as your mix or recipe instructs. Using a TBS shape the dough into balls and roll the dough balls in sugar.  Place the cookie balls on a parchment lined or pan spray sprayed pan. 




 Cook according to your directions directions. We use the time it is cooking to unwrap the chocolates and do our best to save them all for the cookies. LOL!! As soon as they come out of the oven press the chocolate hearts into the hot cookie.

Caramel Pretzel Magic Cookie Bars

Every year our family does a treat exchange at our Bitner Family Christmas party. The basic gist of it is that you make a plate of treats for every family to take home with them. Then you have a bunch of yummy treats to celebrate your holiday without the fuss of having to make them all. I love it! It is like getting to take the party home with you. Not too mention all the goodies. Oh the goodies! 

This year I was going to do a bag of our favorite frozen potstickers from costco- easy peasy but then I saw these bars. So I decided to try and make them on a whim. Best whim ever! They are buttery and sweet and salty and caramely. Oh baby! They are crazy easy to make too. So now these are a serious contender for our treat exchange. I typed up the recipe because I slightly adapted the original recipe. I added nuts. Thats it! HA!



Caramel Pretzel Magic Cookie Bar

6 tbsp butter, melted
1 1/2 C graham cracker crumbs
25-50 pretzels
1 14 oz can sweetened condensed milk
1 C pecans, chopped
1 C semi-sweet chocolate chips
1 C sweetened coconut flakes
1 C caramel bits

Preheat oven to 350 degrees. Put the can of sweetened condensed milk in a bowl of hot water to help it pour easily. Do not pour it into bowl-leave in can!! Mix and press graham cracker crumbs and butter in a 9x13 pan. Pack down firmly. Drizzle half of the can of sweetened condensed milk over crumb crust. Layer pretzels tightly over sweetened condensed milk. Sprinkle pecans, chocolate chips, coconut flakes and caramel bits over the pretzels evenly. Pour the remaining sweetened condensed milk over the top. Bake for 25 minutes or until slightly browned. Let cool completely before cutting!

Pumpkin Butterscotch Cookies

It is November 7th and I am finally making my first pumpkin recipe of the year. Which is coo coo go nuts cause I am a girl who loves pumpkin. This is an easy and fast cookie recipe. They go together wicked fast. They only have three ingredients for cripes sake! I love the texture and consistency of these cookies. Instead of chocolate chips we used butterscotch chip this time which is a nice twist. It seems to make them extra sweet. I hope you try this recipe and love it!



1 spice cake mix
1 15 oz can of pureed pumpkin
1-2 cups butterscotch chips

Preheat oven to 375. Mix the pumpkin and cake mix until thoroughly combined. Throw in the chips and stir up. Drop on to a parchment lined cookie sheet. Bake for 10 minutes or until they no longer look wet. Immediately transfer to cooling rack. Enjoy!


A note! I baked mine at 375 but I think that our oven bakes at a lower temp than it says it is cooking at. Does that make sense? So I think that our oven is about 25 degrees cooler than what the gauge says. So if your first batch come out over cooked then turn your oven down.

No oil pumpkin chocolate chip cookies

SO these little babies are not pretty. They are sometimes so ugly that my kids have decided to call them pumpkin dookies if you catch my drift but they are tasty easy and are a little bit more healthy than your every day pumpkin cookie.  

PUMPKIN CHOCOLATE CHIP COOKIES (DOOKIES)
1 box of carrot cake mix
1 small can of pumpkin puree
1 bag of chocolate chips (or less if you are watching your sugar intake)

Preheat oven to 350, spray a cookie sheet or line with parchment paper. Mix all the ingredients together. drop on the sheet and bake in a pre heated oven for 15-20 minutes.

Chocolate Peanut Butter Rice Crispy Treats

Rice Crispy Treats are a staple goody in our home. We really love them and they are easy enough that almost all the kids are able to make them, Even Sarah our 7 year old is almost there.  If it weren't for my fear of her using the stove she would be. This is the recipe we use and how we have jazzed them up.

Chocolate Peanut Butter Rice Crispy Treats
1 stick of butter
16 oz mini marshmallows
7 cups rice crispies
1 C Peanut butter Chips
1 C Milk Chocolate chips
Grease a 9x13 pan. Melt the butter and marshmallows together. Mix the marshmallow mix and the rice crispies together.  Add chips. Mix in being careful not to mix so much that the chips melt entirely. Press into the pan with a the back of a buttered spoon. Wait for them to cool before cutting. ENJOY!!

Salted Marshmallow Fudge cookies-An easy semi-homemade idea!!

Looking for a quick easy party food? Need something fast to take to a friend in need? Bridal or baby shower coming up? Bake sale? Why not Salted Marshmallow Fudge Cookies? 

 This is a super quick way to fancify your fudge marshmallow cookies and it super duper easy!!  You will need a package of the marshmallow fudge cookies (ya know....like the ones that rhyme with twinwheels?? OR Great Value makes a great (haha get it?? GREAT) version too and they are less than half the price and neither is free from the cracks on the surface of the fudge so go for the cheap I say) You will also need a torch and a sprinkle of kosher salt
BTW this little torch was found at Harbor Freight for $9 full of fuel AND he is refillable.
 Pretty great deal!! (if you are in the market for a torch) :) 
All you do is wave the torch over the top of the cookie until the chocolate gets shiny and sprinkle a little bit of kosher salt over it. Let it set (re-harden) and serve. YUMMY!!
 NOTE-keep in mind that the end of the torch stays hot for a while after the flame is off so be careful with it until you know it is cool.
