You are invited to Free Summer Movies in The Park or should I say Parks?

We are really excited to finally be able to give the wonderful phenomenon of 
Free Movies in the Park 
a try this summer!

Yummy Hotdog Topping

We love hot dogs at our house. We probably eat them once a week. I threw together this concoction one day when I was feeling a little bored with sauerkraut and mustard. And we never looked back! We like it hot so we add lots of jalapenos.  




Yummy Hotdog Topping


1 medium onion chopped
5 roma tomatoes chopped
1/4 to 1/2 cup pickled jalapenos

Saute onions in sauce pan until translucent. Add tomatoes and cook until hot and softened. Next add jalapenos and saute until hot and well combined. Put over your favorite hotdogs. Easy peasy!

How to do a low country boil

I have wanted to try a boil for a long time and finally was able to make it happen with the help of my most wonderful and supportive hubby! 
What is a low country boil you ask?? Well...It is a southern party dish served in the summer months (in the winter you will see oyster roasts instead)where you throw shrimp, sausage, corn, potatoes and seasonings onto boil in a big 'ol stock pot at different intervals. It is also versatile enough that you can serve 2 or 200 just by adjusting the amounts of the ingredients and the best part of all?? It is traditional to dump the drained pot onto a paper covered table and let everyone dig in! F.U.N! (and clean up is a cinch!)    
 I think you are going to love giving this a try!

Low Country Boil-Serves 8
3 lemons quartered
1 onion quartered
4 cloves of garlic(more or less to taste)
2 Tbs old bay seasoning
2 bay leaves
salt to taste
2lbs red potatoes quartered
2lbs smoked sausage cut in about 3 inch chunks
3 ears of corn cut in thirds
2 lbs of shrimp

Fill a large stock pot half way with water and turn heat to high. Add lemons, onion and seasonings. Once you have reached a rolling boil add potatoes, turn heat to med high and let boil for 15 mins. Add sausage and let boil for 5 minutes, Add corn and let cook 7 minutes and finally add shrimp and let cook for 3 or until they are fully pink. Drain. Dump on paper lined table and dig in!!

PS traditionally newspaper is used to cover the table but I used kraft paper. (I guess I was a little nervous about the ink even though I know it can't really harm us)

One Pull Up


I have decided that by end of this summer I want to be able to complete one pull up. Lofty goal, eh? IN all actuality it is a lofty goal for me. I have never been one to do a serious workout routine or really have a major fitness goal. I'm always saying I want to lose weight and be healthier but I have been wondering lately if that is not specific enough. There needs to be one particular thing I am shooting for. Really specific. So here we are. Doing one pull up encompasses two different things in my mind.

1. I need to lose weight. The less you weigh the easier the pull up
2. I need to workout my back, arms or chest everyday to accomplish this goal

I found two articles that I like about doing pull ups. This one here explains the difference between pull-ups and chin ups and gives exercises to help accomplish. This one here give advice and awesome exercises with video for getting it done as well. Also I have chosen to work on weight loss but you don't have to to do a pull up! If you are strong enough then you don't need to lose weight. That is my personal choice. 

This whole goal comes down to one thing for me: I want to be healthier so that I can live the life I want. I want to be able to keep up with my kids. They need a mom that will be around for a long time. At the rate I am going now that won't happen. I want to be strong and healthy and right now I am not. SO here I go! Wish me luck!
